Dashi is the Japanese soup stock made from dried kelps, dried bonito freaks, or dried shiitake mushrooms. After simmering the ingredients, pour the stock out to a bowl using a filter. Dashi is beautiful yellow color and rich flavor.
Each ingredient has a different taste. Dried kelps have glutamic acids, dried bonito freaks have inocinic acids, and shiitake mushrooms have guanylic acids. They make the soup delicious.
There are so many food using dashi. They are miso soup, clear soup, Japanese omelet, Japanese steamed egg custard, simmered fish, nikujaga, the soup of soba and udon, Japanese hot pot, and more! If you make the tasty dashi, the food will be definitely delicious!
